Banana Flower and Cowpea – A highly nutritious and Protein rich meal

In my previous blog I have discussed in detail  about Banana Flower and its benefits. Today I like

to share a healthy as well as a nutritious dish with Banana Flower and Cowpeas.

As we all know banana flower is a storehouse of many nutrients such as fibre, potassium, calcium, copper and also phosphorous, iron, magnesium and vitamin E. Scientifically called ‘ Musa acuminata’ Banana flower is not only nutritious but also it has a high medicinal value. This time I was lucky enough to have it.

On the other side cowpea is a high protein content legume. It is known for its edible seeds and pods. As the seed mature the pod changes its colour to tan or brown. Known as black-eyed peas it has an excellent source of protein, fibre, vitamin B and many other minerals.

How to make this nutritive dry dish

Ingredients:

  • One medium or large sized banana flower.
  • One cup cowpeas ( preferably soaked overnight).
  • One cup grated coconut.
  • Onions – 2 medium sized, or one big sized.
  • Garlic cloves – 1 or 2(optional)
  • Green chillies – 3 or 4 or.
  • Turmeric powder – 1/2 tsp.
  • Mustard seeds – 1 tsp( for seasoning).
  • Coconut oil
  • salt – 1/2 tsp ( or as required).
  • Preparation Time – 10 to 15 minutes.
  • Cooking Time – 10 to 20 minutes.

Let’s see the step by step process :

  • Soak the cowpeas overnight and pressure cook till they are fully cooked, about 3 or 4 whistles on high heat and keep it aside.  Don’t worry if you forgot to soak the peas soak it in hot water for 3 or 4 hours, then it will be ready.
  • Now take the banana flower, thoroughly wash it  and finely chop it. It is better to put the banana flower in water adding some salt in water. It will help eliminate most of the toxins present in it [ apply only if it is bought from the market]. Rub some oil in your hand before chopping the banana flower otherwise a Sticky stain will 
  • Take onions and chop them finely. Onions on one side gives a super taste as well as it is filled with antioxidants which helps in maintaining good heart health.
  • Also chop the garlic cloves. Garlic is a nutrient as well as a medicine. It will add a different flavour to the dish.
  • Take three or four green chillies shred them , you can add or less depending upon the spiceness you need. Green chillies are benificial as they are good source of vitamin C and also healthy for eyes and skin.
  • Take coconut (1/2 of one),grate it and keep it aside. Coconut gives the dish an exotic taste as we give a final touch up with it. Eating coconut is beneficial as it improves heart health, helps in digestion, induces weight loss etc.

How to Prepare the dish :

  • First heat the pan and  pour some coconut oil in to it. When the oil gets heated put the mustard seeds.
  • Let the mustard seeds crackle. Put the chopped onions. When onions turn brown put chopped garlic(optional) and green chillies and shallow fry them for one minute.
  • Add the finely chopped banana flower. To this add turmeric powder and salt and mix well.
  • Cover it and cook for 5 to 6 minutes and after that remove the cover and cook for 3 to 4 minutes in the lowest flame. Don’t forget to stir it frequently as there are chances to it gets sticks to the pan.
  • Once the banana flower gets cooked its time to add the cowpeas already cooked and kept aside. Mix both well, keep for 1 or 2 minutes by stirring frequently.
  • Now for final touchup add the grated coconut which totally changes the flavour of the dish. Mix well by keeping the flame lower and after 1 or 2 minutes switch off the flame. Its not advisable to cook for long time after putting the coconut.
  • Experience the exotic taste and the dish is ready to serve. Even though it commonly goes with rice  as a dry dish it also eaten with chapattis, parathas and doshas.
